The Red Date Drying Process:

Pre-treatment: To preserve the color and taste of red dates during drying, some red dates undergo appropriate pre-treatment, such as hot water blanching or steam treatment. This reduces enzyme activity and prevents the oxidation and discoloration of the skin.

Hot Air Drying: During the drying phase, red dates are placed in modern hot air drying equipment. By adjusting temperature and airflow, the red dates are evenly heated, allowing moisture to evaporate gradually. The process is typically controlled at temperatures between 45°C and 65°C to avoid damage to the quality of the red dates. Depending on the variety and moisture content, the drying time usually ranges from 10 to 20 hours.

Cooling and Packaging: After drying, the red dates are cooled to room temperature and then immediately sealed to prevent moisture from reabsorbing. The dried red dates not only retain a full color and soft texture but also have a longer shelf life, meeting market demand.
