Drying of Beef Belly

Yesterday, Mr. Wang, the head of a food processing enterprise, visited our factory with a batch of fresh beef tripe samples, hoping to test the drying effect to adapt to his pet snack production line. According to communication, Mr. Wang previously used traditional drying methods with low efficiency and unstable quality, and urgently needed a drying equipment that can accurately control temperature and humidity, and batch process beef tripe. After a detailed understanding of their requirements, our technical team decided to demonstrate the beef tripe drying process on site and develop a targeted plan.   

 

After cleaning the beef tripe, it is evenly distributed in the drying room using a hanging hook. The back blowing cycle drying process is adopted, and the initial stage is set at a temperature of 55-60 ℃ and a humidity of 40% for rapid dehydration and shaping; Mid stage heating to 65 ℃ and humidity of 20%, continuously removing internal moisture; Lower the temperature to 50 ℃ and bake slowly in the later stage to avoid coking. The finished product is uniformly brownish yellow in color, with no focal spots on the surface, a shrinkage rate of about 40%, and a complete shape without damage. Moderate dryness and hardness, bending test shows no residual moisture inside, meeting the chewiness requirements of pet teething snacks. The single drying cycle is shortened by more than 60% compared to the customer’s original drying method, and the batch consistency is significantly improved.   

 

After seeing it, Mr. Wang expressed satisfaction and said, “The drying uniformity and energy consumption control fully meet our expectations, solving the core pain points of our mass production.” Based on the trial machine results, Mr. Wang signed an order for an 80 tray rear air drying room on the spot, equipped with a customized shelf structure and energy-saving heat recovery system, to meet the production needs of his beef tripe drying. The equipment is expected to be delivered and installed next month. Our company will provide full technical training and after-sales support to help customers quickly start production.
